Concept
Concept
Kagurazaka Kouseki fuses the tastes and skills of the fishermen and farmers who provide incredible ingredients to the artisans who deliver superb sake, as well as the meisters and painters who create distinct tableware and the architects who transformed the restaurant interior.
As the chef, I am committed to creating culinary delights to be enjoyed by our guests. This is the hope of all involved in the restaurant and is apparent when you visit Kagurazaka Kouseki.
I prepared each of our Japan-wide ingredients in the most suitable manner for realizing the ultimate flavors of the meat, fish and vegetables. I have also carefully selected sake perfectly matched to the entrees.
We aim to create the perfect dining experience through a fusion of the cuisine, sake, tableware, space and conversation. We invite you to come and set aside time to enjoy our dining experience.
Finally, Kagurazaka Kouseki is a reservation-only restaurant that limits its clientele to patrons introduced by other patrons. This helps us deliver a private and delicious dining experience.
Greeting
Greeting
Head Chef Shinji Nakamura
I first worked for 13 years in the kitchens of the Four Seasons Hotel Chinzanso Tokyo gaining a range of experience beyond merely Japanese cuisine. This was followed by a further 15 years at Kouseki Minami-Aoyama where we created traditional Japanese dishes while being committed to constantly seeking new heights in teppanyaki, charcoal grilling and other styles of cooking. At Kagurazaka Kouseki, in addition to the food and drinks, I am dedicated to providing an unforgettable experience to customers through the tableware, counter space, general interior and table conversation.
I aim to express my choice of each ingredient in each dish created for our guests. I am particular about each ingredient and want to express that in each dish. I also hope you enjoy the fine sake and wines I've carefully selected from throughout Japan.
